This scrumptious Breakfast Casserole is a breakfast lover’s dream come true, loaded with tater tots, ground sausage, eggs, cheese and more! Hosting family gatherings and fun weekend trips is our specialty, and this casserole is the perfect crowd-pleaser. While bagels and cream cheese are a go-to, sometimes you need a game-changer. Enter: the Tater Tot Breakfast Casserole—a hearty, easy-to-make dish that’ll have everyone coming back for seconds.

You can make this recipe ahead of time and keep it in the fridge until you’re ready to bake!

Cook the Sausage: Heat a large skillet over medium-high heat. Add the sausage, stirring and breaking it up as it cooks. After about 2 minutes, add the diced onions, peppers, garlic powder & Lawry’s. Continue cooking for a few minutes until the onions and peppers have softened. Drain most of the grease.

Combine Ingredients: In a large bowl, toss together the tater tots, sausage mixture and cheese.

Prepare the Pan: Spray a 9×13-inch baking dish with cooking spray and pour the tater tot mixture into the pan.

Mix the Eggs: In the same large bowl you used before; whisk together the milk, eggs, salt, and pepper.

Assemble and Bake: Pour the egg mixture over the tater tot mixture in the baking dish. Bake in a preheated oven at 375°F (190°C) for 45 minutes to 1 hour, or until the casserole is set and golden brown on top.

Ingredients

  • 2 lbs frozen tater tots
  • 2 lbs ground breakfast sausage
  • 1 medium diced onion
  • 1 cup diced peppers about 2 whole peppers
  • 1 cup shredded cheddar cheese
  • 12 eggs
  • 1 cup milk
  • 1/2 cup sour cream
  • 1 tbsp garlic powder
  • 1 tbsp Lawry's Seasoned Salt

Instructions

  • Preheat oven to 350 °F
  • Heat a large skillet over medium-high heat. Add your sausage to the pan and begin browning it, breaking it up with a spoon as you go.
  • After 2 minutes add in your diced peppers and onions
  • Drain the excess grease!
  • In a large bowl toss the taters, ground sausage mix, cheese and seasonings
  • Spray a 9×13 pan with cooking spray and pour the tot mixture in
  • Use large bowl ( be smart, don't dirty another bowl) whip together your milk & eggs with salt & pepper
  • Pour egg mixture over your tots and put it in the oven for 45-1hr

Notes

If you have picky eaters at home as I do, omit the onions & peppers!

    This breakfast casserole was both delicious and satisfying with ingredients that are readily available. This would be a good holiday breakfast that could be made in advance.
