Fresh Mozzarella, Tomato and Stone Fruit Salad

What could be better on a summer evening than sitting outside, soaking up a warm breeze, and munching on a plate of farm-fresh tomatoes, nectarines, mozzarella, and basil? It’s like a farmer’s market threw a party on your plate and invited only the best ingredients. All you need is a knife, a grill, and the ability to resist the urge to dance in joy over this simple yet spectacular summer feast!

So, you probably know by now I frequent Heckman Orchards, my go-to spot for all things fresh and fabulous. And—bam!—the idea hit me. Remember that chef I used to work with on LBI who served up an extravagant seasonal burrata salad? We’re talking fresh burrata, heirloom tomatoes, grilled stone fruit, green goddess dressing, and his secret granola crumble. I mean, come onnn it was delicious!

Well, this salad isn’t quite that (HAHA), but it’s a simpler, everyday version for us mere mortals. Less fancy, just as tasty, and perfect for when you want to impress without the chef’s hat!

Fresh Mozzarella, Tomato and Stone Fruit Salad

Savoring a plate of farm-fresh tomatoes, juicy nectarines, creamy mozzarella, and aromatic basil? All local and fresh, with just a knife and grill to bring it all together. It’s a simple, yet exquisite taste of summer that feels like a celebration in every bite! Feeds a crowd!

Ingredients

  • 3 tomatoes use whatever you have ripe on hand, in this recipe I used two whole tomatoes and a handful of cherry tomatoes
  • 4 stone fruit I used nectarines
  • 16 oz fresh mozzarella keep it easy, use 1 log of pre-sliced mozz!
  • 1/4 cup fresh basil slice it, chop it, keep it whole: whatever tickles your fancy
  • 2 tbsp balsamic reduction I use Alessi brand. Balsamic glaze works as well
  • 2 tbsp light extra virgin olive oil I prefer a lighter taste, you can substitute EVOO

Instructions

  • Turn your grill on medium high heat
  • Wash & dry all of your fruit!
  • Cut the nectarine off of the pit into large pieces
  • Place your nectarine pieces onto the grill, skin side up for 3-4 minutes
  • Slice your tomatoes and place onto paper towels to dry for a few minutes
  • Slice, chop or gather your basil!
  • Now, use your creativity and put together your dish! At the end, drizzle your light evoo and balsamic reduction over everything.
    Salt and pepper are a must!
