Isn’t it amazing when you’ve got your sh** together in the morning, fire up the crockpot, and know dinner’s already sorted? It’s like hitting the jackpot! While you tackle gymnastics, t-ball, school runs, and birthday parties, you get to bask in the glory of a meal that’s ready and waiting. That’s the kind of high us hangry moms dream of—effortless and stress-free dinner prep amidst the daily whirlwind!

Choosing your roast..

I don’t always use the same type of roast but typically look at the best bang for my buck and that it has a some nice fat in it. A pork shoulder, a boneless pork leg roast or boneless pork loin roast work the best

Sear or Not to Sear….

Yes! You don’t have to, but I have always been happier with the results when I do. The seared exterior helps lock in the juices and keep the pork roast juicy and tender. Not to mention the flavor it adds to the entire dish!

How it’s made..

  1. Always take your meat out of the fridge before you start prepping. You don’t ever want to sear it straight out of the fridge. Pat it dry with paper towels and add it to a bowl.
  2. Next wash and peel your potatoes and carrots
  3. Dice an onion
  4. Now mix together a adobo, lawry’s and adobo. You’ll pour half of this mixture over your meat and reserve the rest
  5. Pour a drizzle of evoo over the pork and massage the seasonings all over it
  6. Heat your pan or crockpot to medium-high heat. Once the pan is hot, sear the roast on all sides. It typically takes around 10 minutes to finish
  7. Put your pork and juices into the crockpot
  8. Add in the potatoes, carrots, diced onion, onion soup mix, brown gravy mix and the rest of the seasoning mix and give it a little stir
  9. Finish with chicken stock and cook on high for 4-6 hours
  10. If you are planning on making a gravy; remove the meat from the pot. Pour everything else into a strainer sitting on a bowl. Make a slurry. Stir together 1 TBS of cold water with 1 TBS of cornstarch. Add your saved broth and slurry back to the crockpot and stir for a few minutes to thicken!

Ingredients

  • 1 3-4 lb pork roast I used a pork loin roast this time
  • 5-6 medium potatoes, washed & peeled I used yellow potatoes
  • 6 large carrots, washed & peeled
  • 1 medium yellow onion
  • 1 packet onion soup mix
  • 1 packet brown gravy mix
  • 2 tbs adobo
  • 1 tbs lawry's seasoned salt
  • 1 tbs dried oregeno
  • 1 cup chicken stock unsalted

Instructions

  • First, take your roast out of the packaging and dry it on paper towels. Let the roast sit at room temperature while you prep your other items
  • While your roast is sitting, begin by washing and peeling your carrots and vegetables
  • Cut the potatoes and carrots into large chunks
  • Dice your onion to your liking (my family doesn't enjoy large chunks of onions in anything so I dice mine small)
  • Next in a small bowl stir the adobo, lawry's and oregano together
  • Put your pork, 1/2 of the seasoning mix and a drizzle of evoo in a bowl and massage the seasoning all over your pork (I do add a touch of salt & black pepper at this step, just be mindful; the other seasonings have salt in them!)
  • Sear the pork on all sides. The entire process should take about 10 minutes
  • If using a pan to sear your meat (some crockpots have a sear option), put the pork and juices into the crockpot
  • Add the potatoes, carrots, onions, onion soup mix, gravy mix and the remaining seasoning to the crockpot and give it a little stir
  • Pour in the chicken stock
  • Cook on high 4-6 hours (mine only took 4 hours this time) if your meat is falling apart, it's done.
  • At this point, you could eat the roast as is or thicken your sauce for a nice gravy
  • I remove the meat, then pour the crockpot goods into a strainer that is sitting over a bowl. Pour the juices from the bowl back into your crockpot and add a slurry. (Mix 1 TBS cold water and 1 TBS cornstarch together and pour it into the crockpot) Stir for a few minutes to thicken
