Back in the day, my friend Laura and I were lucky enough to work at Denino’s, the legendary pizzeria that has earned its stripes in the NY and NJ pizza scene. With its ultra-thin, crispy crust, every slice is a masterpiece. But let’s be honest—the best part of the gig? The pizza! Our favorite was a white pie topped with sliced cherry peppers and a bangin’ arugula salad. The creamy cheese paired with the spicy peppers was a match made in heaven, while the arugula added a peppery crunch and zesty brightness. Each bite was a flavor fiesta that kept us coming back for more! Once we realized all that pizza was starting to add a little too much to our waistlines—HA!—we decided to embrace the salad that came with it because it was simply irresistible!
Trust me, this salad isn’t for the faint of heart! With zesty bursts of lemon, a spicy kick from the pepper flakes, peppery arugula, and shavings of parmesan, it’s a flavor-packed adventure in every bite. This salad definitely knows how to bring the party!
Really. It’s barely a recipe ya’ll. But I like it, I make it and it’s delicious. So let’s make it!
It’s quite simple really. Whisk together the juice from 1 lemon, 3 TBS of light olive oil and a pinch of red pepper flakes. I use about 4oz of a container of arugula. You can adjust this as much as you’d like.. just depends on how much dressing you like on your salad! Then throw in as much shaved parmesan as your heart tells ya and you’re done! (I use probably about 1/2 cup)
This salad really packs an acidic punch, making it a fantastic pairing with something rich. As I mentioned, topping a white pizza with this 2-Minute Arugula Salad is pure brilliance! If I’m enjoying a creamy Alfredo, this salad is the perfect side to balance out all that richness. It goes well with a variety of dishes as a light side or even on its own! And if you want to make it more filling, just toss in your favorite protein to give it a hearty boost.
